In some ways, I can’t believe January is almost over, and in other ways, I can’t believe it’s still winter. The weather this weekend was absolutely gorgeous! Sunny, hot, and clear skies. I went for a hike with my sister yesterday to soak it up.
When I was walking down a hill, I somehow really screwed my knee up with just one step. It’s feeling better today, but it still really hurts to bend it. Figures- I had literally just been thinking about how I could fit in some running this week when I hurt it.
I started prepping food for the week when I got home so I didn’t have to spend much time cooking after work. I roasted a ton of butternut squash (about the equivalent of one and a half butternut squashes) and I ended up eating most of it! Whoops.
I made my favorite healthy dinner- cinnamon roasted butternut squash (that I ate about five more servings of), kale chips, and pan-fried tofu. And because my dinner was so healthy, I had to balance it out by having ice cream after. I almost made it through the month of January with no dessert, but ice cream has a real hold over me.
Since the oven was already on, I made a batch of granola and roasted a pan of broccoli to snack on. I ended up burning the granola a tiny bit and burnt the hell out of the broccoli
Slow clap for me. I HATE to waste food and I will eat terrible, disgusting things to avoid wasting anything, but even I couldn’t choke this down. Heartbroken.
Speaking of unpleasant things-
I sucked it up and went jean shopping again and got this pair of pants at Old Navy. I normally don’t trust Old Navy pants but I had a coupon that had to be used, so these ended up being 20 bucks. Not too bad!

Oopsie on the broccoli. Been there and done that. Right now we’re having very oddly warm weather here – upper 60′s and sunshine. Not complaining of course. Hope the knee is ok.
It’s unseasonably warm up here. I ran in 40 degree weather today and it was absolute heaven. Not that I’m complaining
I’ll gladly take that over snow or frigid temperatures.
That’s almost the exact same thing I was eating this weekend. I had roasted potatoes instead of squash. Which also reminds me that I have something like a kilo of broccoli I need to somehow consume…
Whoa, broccoli looks super weird when its all burnt. Invest in a hand timer. It has saved my life (probably) a few times.
Wow that is some really burnt broccoli! The weather is in the 50s-60s here. So strange! I mean, last week we had freezing rain and hail.

Aw, it sucks to waste food, but if it’s disgusting don’t eat it. Why waste your time eating things that you have to choke down? That’s not good for anyone, even if you’re trying not to waste. You’re wasting other things when doing that.
Those jeans look great! I hate shopping for jeans – they are just so unforgiving and I really struggle to find a pair that fits me properly.

I tend to dislike shopping for jeans as well. I just wear the same few pairs over and over again so I don’t have to. It was actually pretty nice today – 45*F and no snow which for Chicago is surprising!
cinnamon roasted butternut squash sounds fantastic! The weather by me has been surprisingly really nice! It’s a little overcast today but definitely better than cold and snow!
We have definitely had the warm weather this week too! Today was 70!
Sorry about the broccoli! Such a bummer. I always overcook or undercook broccoli. This weather in Chicago is totally whacked out, too. It was like 50 degrees or something crazy like that here today. I *HATE* shopping for jeans. But I need to go soon. I’ll have to hit up Old Navy when I do.
It’s been such a mild winter here in Boston! Our only real snowstorm was on Halloween weekend. We’ve averaged about high 30s, low 40s for temps. I love it though, because I have training to do!
I must get braver about posting my mishaps. Last week I forgot the roast in the oven and even the dog wouldn’t eat it.
