It’s Wednesday! It’s Wednesday! That means it’s time for What I Ate Wednesday
Lunch was perfect and exactly what I was craving!
Pre-roasted kale and broccoli with ketchup hummus on top. God, it was delicious! I had an apple on the side with bread pudding hummus. Yes, you read that right. Bread pudding hummus. I made cookie dough hummus and added in chunks of s’more bread pudding. I made a double batch on Monday and it will be gone by tomorrow
My lunch was a little lacking in protein, so homemade yogurt and granola (x1000) was my afternoon snack.

Dinner was quinoa, tofu, yellow squash and curry sauce on spinach.
I had planned on taking a rest day today but decided to squeeze in a 3 mile run after dinner. When I got home, I devoured a chocolate chip blondie (oh my god these are good) with tofu chocolate mousse. Despite a light workout day, I was ravenous all day!
Do you feel hungrier than normal on rest days? I do, but I’m also running 13 miles tomorrow and will surely want to eat my kitchen
