I’ve been out of canned beans for a while, so a few days ago I boiled a huge pot of black beans to make black bean and corn quinoa salad. I’ve boiled my own beans a hundred times before, but somehow I managed to burn them! It’s pretty hard to burn something that should be full of water, but if anyone can, it’s me. I caught it before the fire alarm went off, but those suckers were smoking!
I salvaged the beans (although some are a little crunchy) and made the salad anyway. No food goes to waste here!
I am so happy to have fresh fruit in my life! I made an emergency Costco trip last night. I couldn’t stand it any longer!
I had another apple for a snack with
peanut butter Biscoff spread! This was a total impulse buy that is SO WORTH IT.
Dinner was tofu, refried beans, and hummus on salad. The beans were from a can and gloriously un-burnt
Grapes were my after dinner snack!
