Happy What I Ate Wednesday!

I’ve had pain on the ride side of my mouth / throat for the past week or so- at first I thought I was getting sick… and then I thought I was getting a cavity… and now I have no idea what it is! It kind of hurts to chew, so as many meals as possible have been drinkable or spoonable (ooh la la!)

I have fallen in love with cottage cheese in overnight oats, and I will never look back! I’ve also fallen in love with chocolate peanut butter. I never thought I would say this, but I almost want to finish the jar just so I can make OOIAJ!

Lunch was a simple green smoothie. Swiss chard makes smoothies the most godawful shade of greenish brown, but damn, it tasted good.

I had my feet up on the coffee table a few days ago and my brother walked into the room, stared at my feet for a minute, and said ‘Why are the bottoms of your feet orange?’

Maybe it’s because I eat pumpkin as often as possible… and when I can’t find pumpkin, I eat entire butternut squashes for dinner. You know, like normal people. LAY OFF ME!

My apple took a dip in more chocolate peanut butter…

…and whatever the apple didn’t eat, I ate with a spoon :)

Ice cream and a brownie may or may not have been eaten after lunch.

Dinner tasted better than ever because I didn’t make it!

I came home late from work and dinner was made! My sister made tofu, and I ate it with leftover brown rice, spinach, and the crack curry sauce from Trader Joe’s. I love cooking, but sometimes it’s really nice to walk in the door and have dinner ready.

Strawberries were on sale for 88 cents a carton! I don’t feel so bad about eating two cartons in a day now.

Dipped in ricotta- strawberries and cream!

Sorry for the short post- I have an anthropology exam to cram study for! Stay tuned for tomorrow’s post. I have an exciting announcement! Hint… it’s a lengthy announcement ;)

    ps i totally eat entire butternut squashes by myself… my stomach usually hates me afterwards though :)

    I can’t cope with cottage cheese in oats – cottage cheese in Australia is super salty, so it wrecks it in my opinion! Loooove the brownie and ice cream though :)

    I love it when I get cooked for. I’m going to visit my parents this weekend and I’m looking forward to my Dad cooking for me :-)
    I’ve not tried cottage cheese in my oats – but it does sound like it would be a good creamy idea!

  6. Oh interested on your next post! I don’t often have people cook for me – now that I’m mostly vegan the best shot I have is going out to a veggie resturant! Its a shame really. I think my mam is buying stuff in for Easter lunch – I told her to go with salad, hummus and pita, can’t go wrong there really can you?

  7. ooo lucky you had food ready for you! i would like it but mymom cannot cook vegan for her life.. hahaha… sooo… shed make me some carnivore dish which obvi i wouldnt eat!.. umm i LOVE how you dip strawbs in ricotta! nice combo idea!

    My husband is really the only person that cooks for me and he tends to put a lot of oil in stuff which I don’t like. If he made it according to my specifications I would enjoy it. I sound like a total control freak, don’t I?!

  11. Hope the mouth/throat thing isn’t serious. Are you going to the doc??? I like it when the hubs cooks for me. But if he’s not cooking, then he’d better be cleaning up my messes ;-)

  16. How nice to come home and have dinner all ready for you! Wasn’t the case for me! I spent about 1 1/2 hours on dinner last night! Ug.

    As much as I love cooking, it is nice that my roommates and I take turns cooking. Of course, I will then help with the dishes. :-)

  23. My crack sauce is TJ’s roasted red pepper sauce… I freakin’ love that stuff!!!!! ;D Haven’t tried the curry, but I need to!

  29. I tried the cottage cheese one time in my oats and I wasn’t very convinced. The texture kinda threw me off but I’m not a quitter. Gotta give it another go :D

    I SO love when others cook for me, especially when maybe it’s something that I wouldn’t otherwise cook for myself!

    p.s. It is SO overnight oats season! I started with overnight quinoa today and it was HEAVEN!
