What I Ate Wednesday!

It’s that time of week again- What I Ate Wednesday!

Breakfast was pretty epic, if I do say so myself. It was supposed to be pretty warm today, so I knew that overnight oats would sound good this morning. I wanted a huge portion, though, so I decided to combine voluminous oats and overnight oats!

Big Bad Mama Jama Overnight Oats

Ingredients:

  • 1/3 cup oats
  • 1 1/3 cup water (or almond / soy / regular milk)
  • 1/3 cup vanilla yogurt
  • 1/2 tbsp chia seeds
  • 1 tsp cinnamon
  • 1 tsp honey (or agave or maple syrup)
  • 1 tbsp nut butter
  • 1/2 plum, chopped

Directions:

  • Cook oats according to voluminous oat directions. I combined the water and oats, microwaved for three minutes, and let sit for a few minutes until most of the water is absorbed.
  • Stir in chia seeds and let oats cool.
  • When oats are cool, stir in cinnamon and yogurt and stick in the fridge overnight.
  • The next morning, top with nut butter and plum. (Or whatever other toppings!)

All the goodness of creamy overnight oats, but the portion size of voluminous oats! It was delicious and satisfying. If you don’t like sweet oats, I would leave out the honey. I used white chocolate peanut butter and the whole bowl was very sweet!

I was home by 10 this morning because I got out of class early and ditched my other class decided to come home so I had a little snack.

I made chocolate peanut butter out of peanut flour and cocoa powder and dipped an apple in it. Finger lickin’ good!

My other eats were sprinkled throughout the afternoon. Instead of catching up on homework, I decided to try to change the theme of my blog. It was a mess! I don’t know if anyone saw the monstrosity it became for about an hour, but I switched it back until I can figure it out.

I guess there are worse things to stress eat than strawberries, right? Look how big this one is!

May I present- my lunch every day for the past week and a half!

Spinach pancake, refried beans, and ricotta cheese on spinach.

Tofu mousse may or may not have made an appearance. I scored this cereal for really cheap! I don’t recall the brand, but it’s normally really expensive because it’s organic… and it happens to be a kid’s cereal, hehe.

Dinner involved the Swiss chard I picked up from the farmer’s market on Sunday.

Stuffed with grains and dried fruit- it was amazing. I’ll post the recipe soon! Perfect to eat on a warm-ish night.

Dessert-

Pumpkin yogurt in the pumpkin can with more cinnamon cereal! Deeee-lish. There goes the rest of my yogurt!

Do your tastes change with the weather? As soon as it heats up, I forget all about hot oatmeal and start drinking more smoothies!

  2. Voluminous oats in the form of overnight?? Omg I am loving this so much. How does it compare to overnight oats? I’m completely infatuated with this post lol Btw do you find the 1/3 cup of oats to be filling. I usually use close to 1/2 cup but I’ve been seeing most bloggers use 1/3 cup.

    • It’s really filling, actually! I usually eat 1/2 cup too, but the last few times I’ve made voluminous oats I’ve used 1/3 cup because that’s what the original recipe calls for. It makes a heck of a lot because they absorb so much water, and with the fat from the peanut butter, it’s a really satisfying breakfast! They taste just like overnight oats except the portion is bigger :)

  3. You know, I keep eating oatmeal all year. Love it. Now soups and chili end up taking a backseat again until fall and I start going with even more salads, sandwiches and grilled veggies.

    Oh yum, those oats and strawberries look AMAZING! My tastes definitely change from season to season… in the fall all I want is apple spice and pumpkin spice, in the winter I’m all about the peppermint, and the spring/summer is all about the fresh berries and herbs :)

  13. Mmm, I forget how good refried beans are every now and then! Reminds me of camp, where we would have taco-eating contests. A friend of mine was the girl’s camp champion and ate 25. Ahhh!

    I never crave smoothies, and I can sweat through a hot bowl of oats in 99 degree weather…so nope to your question! haha! Have you ever tried savoy cabbage? It’s wonderful as a grain wrapper, too. :)

    OMG, chocolate peanut butter!? That sounds like it should be so unhealthy, and then I read it’s made out of peanut flour and cocoa! Genius. I might need to start trawling the interwebs for peanut flour at this rate…

  17. I either go the complete opposite of the season i.e. crave ice cold smoothies in winter or the other and just have to have soups when its cold – I kind of flick between them both! At the moment I have huge cravings for raw foods, I think its the spring starting again but every so often I just want to eat something autumny like squash!

    I don’t really notice too much of a change in cravings as the seasons change. That’s weird right?

    Ma appetite definitely changes with the seasons! When it gets warmer, I crave more salads and green smothies, while in autumn and winter, it’s all about warm and well-cooked dishes. :)

    As for my eats changing, come summer I definitely crave more salads and smoothies etc. and move from roast veggies to raw or lightly steamed :-)
    I ALWAYS crave nut butter though ;-)

    It’s pretty much always cool enough here to eat oats. When it does get a bit warmer I definitely eat more salads and smoothies etc. I do like hot food all year round though.

    I love that cereal. I have gotten the Mom’s Best Organics brand before and it tastes just like childhood. I ate it all the time while pregnant.

    And oats can never be too sweet in my book. You also reminded me I need to get plums this week at the store. I always think i want one mid-week and then forget to buy them on the weekend.

    Im with you girl, once it heats up I ditch the oats and hot meals!! I usually ditch my hot coffee for iced as well, but that takes more time and patience than choosing yogurt over hot oats ;)

    I don’t give up my oatmeal in hot weather (in TX it’s hot most of the year!) but I do find myself craving fruit and smoothies more in the summer. And frozen yogurt!

    I love huge bowl of oats but have never followed a VOLUMINOUS oats recipe!
    That strawberry is ENORMOUS! I bought some the other day that were just like that!

    I ALSO have the kids organic cinnamon toast crunch, in fact, its in my yogurt that i’m eating RIGHT NOW:)
